I’d love to see a way to hide or add various entry fields when creating a new entry.
For example, when I’m making new employees, I know I’m going to want “work phone” for the phone number and “work email” for email, and I know I will want 2 “Date” fields, one for birthday and one for employment.

You already do have some control over this. You can drop and drag the order that you want them to be displayed on the Add Entry admin page. You can also hide the uneeded field sets by using the screen options.
The add and edit pages are saved separately so you can configure them independently of each other making both more the way you need.
What is not possible yet is to define which repeatable fields are already “open” and of what type the “open” repeatable field should be.
