Which files do I need to modify to make my search and category selection appear to be 100% wide on my mobile screen?

Please add the following to your theme’s custom CSS area found in the Customizer:

#cn-cmap span.cn-search {
	display: block;
	float: none;
	width: 100%;
}

#cn-cmap span.cn-search input {
	width: calc( 100% - 32px )
}

#cn-cmap form.cn-form select.cn-category-select {
	width: 100%;
}

Sorry, I am not sure I understand the question. Could you please give more details?

Actually are you asking why it does not look like it does on the desktop? With the searchable filter? That is because the native mobile drop down is being used, which is what you actually want the user to use because they are optimized for the mobile device.

I want to make the design of the category selection in mobile the same height as the search.

That is the core mobile device style for the drop down, sorry, I can not change its style.
