whether it is possible to organize a system of voting and assessment company to get something like the rating. And then the output of the company is not in alphabetical order, and rated?

I’m sorry, but there is no way to rate entries in the directory at this time.

then we can somehow independently conclude Companies in directory – not alphabetically or by date updates and ssogdasno how the numbers in the generated field

Yes, see the docs for the order_by shortcode option. There is also the Custom Entry Order extension.
