The problem I am running into is that I need another directory to be displayed on a different page on the website. The 2nd directory will have 980 categories (all of which are different than the categories in the directory displayed on the above link). There will be 482 entries in this 2nd directory.
Question, is this possible to have multiple directories on the same site with completely different information of each?

Yes, it is possible. See this FAQ. It is for cMap but it will work the same for your template too.
What I suggest is moving all your current categories to have a new parent. Maybe call it “Exhibitors”
And then put all the 980 categories for the 2nd directory under a different parent.
Then follow the direction is the FAQ. That should do the trick.
