I there an option to set how many entries to view per/page? Currently, all my entries are showing up on the first page. I would like to be able to set 10 entries per/page. Also, Is there an option that will list the latest entries from top of the list on down. Currently, my entries are being listed in random order on the list.

Yes, with the cMap template (which you are using at the time of this reply):
- Navigate to the Connections : Templates admin page and click the Customize button for cMap.
- The page will refresh displaying the Customizer on the left with a preview on the right.
- Click the back arrow in the upper left of the Customizer.
- Click the Pagination panel.
- Change the number from 20 to 10.
- Click the Save and Publish button and then exit the Customizer.

Entries are displayed alphabetically by default. You can change the default sort order by using the order_by shortcode option. You’ll want to add either
order_by="date_added"ororder_by="date_modified"depending if modified entries should be moved to the top of the list or not.Hope that helps!
