Also, please attach a copy of the CSV file being imported and a screenshot of the mapping step when importing that CSV file. When I get this info, I’ll take a look asap to help get this resolved for you.
One other thing you could do to diagnose the issue is the theme/plugin conflict checks.
I suspect, at this point another plugin/theme is causing an error which is corrupting the server reply required during the import process.

That site is using a pre release beta addon which comes with the Pro Pack (on request). Additionally, they customized it a bit themselves. I’ve added this as a note to the demo link (now that I know) so it is more clear what the webmaster is using.
cMap does have an option which can be enabled to allow more than one category to be chosen from the current category select dropdown.
You can enable this feature by adding
enable_category_multi_select=trueto the existing[connections]shortcode so you have something like this depending on whether or not you have any other options set:[connections enable_category_multi_select=true]Hope this helps, let me know.

Are you trying to import new entries or new categories (only)?
Assuming you are just importing categories…
As for the mapping step not showing, it sounds like an error is occuring during the processing that occurs after uploading the CSV file but before the mapping is displayed.
A lost of things may cause that to occur from a bad file to plugin / theme conflicts.
My first suggestion is to make sure the CSV being uploaded is a properly formatted CSV file.
Since this is a category import, the CSV file should contain only the following headers of which the last three are optional:
Name, Slug, Parent, Description
The exact names are not important since they can be mapped, but if you use the above names, they will be mapped automagically.

It seems the theme and the Cherry plugin are making spans block elements. This cause items that should be inline (side-by-side) to be each on their own line (stacked).
I actually do have a fix in Connections to address theme’s which do this, but IE is so old it does not support the fix.
Try adding the following to the theme’s custom CSS area, generally found in the Customizer:

Yes, the Gridder template does include the searchable category filter and keyword search features but are disabled by default. Here is the link to the doc page which which has the instructions to enable these features:

Sorry, but I am not exactly sure what you mean by “adaptable, alterable“. The design of the template is as shown on the product page and the demo page of the template. So, basically, what you see is what you get. There are options to configure the grid size and colors. There are over 70 options available that can be used for tweaking but the overall style and structure will remain the same.

KeymasterezTOC does not seem to be active… It may be best to contact the theme support team. They should be able to give you the required CSS to ensure they dots are not added to the TOC list.
