I am not able to replicate this… it is odd because the only difference between editing an entry and copying an entry is a hidden field defining the action of copy/edit.
Are you able to edit an existing entry without its data disappearing?

As far as I know Polylang has not added support for Connections. So there would not be a way to add individual Polylang languages for each entry. What you could do is add each entry in each language that you require and then assign them to a corresponding category.

Navigate to the Connections : Manage admin page. At the very top of the screen there is a “Add New” button, click that button.
Also, in the primary Connections admin menu, right under the “Manage” link, there is an “Add New” link.
Both of these options to add a new entry are modelled directly after adding a new page/post in the WordPress admin so as to be familiar as possible.
