Not really an endorsement.. but in supporting others I run into the [Admin Menu Editor plugin](Admin Menu Editor) quite a few times. Seems pretty nice. I also like the Members plugin. You could use both together since they do different functions. With Members you could create a highly tweaked “Client” role and then use Admin Menu Editor and the Client role to create a trimmed down admin.
