The from email address comes from the Contact form what every you enter into the “Email address:” field and the to email address comes from the email address that was added to the entry (the preferred if one set as preferred OR the first if more than one if preferred was not set, in that order). NOt sure that is what they are talking about though :/ Try checking the email address set on the WordPress General Settings admin page.

If the email address are correct in all three locations then another plugin or theme is causing a conflict by removing the username from the email address.
