To change the color see this.

Looks like they used the #f0edde color.

To change the bio text label, see this.

The specific shortcode option is str_bio_head

So, I suspect their shortcode is something like this:

[connections color="f0edde" str_bio_head='Profile']

It does appear they may have done some custom CSS/template files, but hard to know for certain.
