Follow this tutorial on how to add checkbox group custom field.

Change checkboxgroup to select. This will add a new select drop down with your options that can be used when adding/editing an entry.

re: I bought CMAP and Gridder, but is there a way to change the CMAP to gridder? I’m assuming I need to buy a “gridder” for each site in a multisite?

Not sure I understand the question. You already own both. TO change the which is the active template navigate to the Connections : Templates admin page and activate the Gridder template. Hope that answers your question.
