You would enable this option. And then go to the Connections : Templates admin page, click the Individual template type (top/right link) and then activate the desired template. The you would do the same for the Organization template type.

Actually, by default, it does show all fields plus map. Looking at the page from your other post, something is wrong because the correct template file in cMap is not being loaded. The only reason for this to happen is that it is missing in which case it would fallback to the default template file of cMap.
