Sorry, no, there is not a way to remove the adding of the http://. because it is very important that http:// be on external links.

To turn the email address into an icon, you can use the email_format format shortcode option. Add it to you shortcode so you have something like this:

[connections email_format="%icon%"]

This will also remove the label. You can then use a bit of CSS to make them appear all together.
