You can, but there is no point and click method available at this time. They must be added programmatically by a developer. There is extensive inline phpDoc that is very thorough for each of the functions a dev would need to use to add custom fields. There are several free extensions I’ve released as working examples that a dev can refer to when coding custom fields, those too have very thorough inline phpDoc. Granted those docs are for devs and not users, but trust me, the level of inline phpDoc I write I far above most other plugins.
If you need a dev, to add custom fields, let me know as I can recommend one to you that has a lot of experience with Connections, its templates and custom fields. Everyone that I’ve referred to him has been very pleased.

I understand and do very much appreciate your feedback. Documentation is hard and takes a lot of time to write … more time than to code something actually, believe it or not. I am frequently adding and updating the docs. Currently I have 107 FAQ/s and 117 doc pages published which generally covers over 90%+ of what I usually get asked in the support forums. Admittedly, the doc pages that are available are very basic, but that is on purpose because I do my best to follow the core WordPress philosophy of decisions, not options (I feel Connections already has too many options…). Where I deviate is… I also try to cater to more advanced/experienced WordPress users by providing many methods to tweak or customize Connections to suit their needs. It is these “advanced” customization options and techniques that there really is no documentation for except for what one will find in these support forums.
With all that said … I hope it is not taken as me being defensive, just explaining the current state.
Is there any specific documentation you’re looking for or maybe not able to find other than custom fields? I’ll make sure to add it to me docs todo list.
