Looking at you site, it appears you have the Single Entry template option enabled on the Connections : Settings page under the Display tab. I suggest disabling that option so Connections will use the template you copied to the /plugin/ folder.

With that option enabled, it is using the template based on entry type. If you want to keep this behavior, then on the Connections : Templates admin page you need to active you custom template under both the Individual and Organization template type. I hope that makes sense.
