Yes, you can selectively display only the entry(ies) you wish using the id shortcode option.

I see you mention “map” and “open” so I assume you mean with the cMap template, yes? Sorry, but no. There is not a way to have the map open. An option many others use is showing the entry using a different template. You can use the template shortcode option to override the current activate template. I suggest the Bio Entry Card. It’ll show everything but a map.
