Sorry, but last name is a requirement. I can not think of working around this requirement. The best solution I can think of off the top of my head is to instruct those users to add none to the last name field.
Oh… here’s a thought… Use the Field Configuration settings to set the default entry type to Org and hide the other two type options. You could then rename the Org field to be Full Name
Of course using this method you would lose the ability to sort by first/last names.

Yes, the list can be sorted by first name. Here’s the link to the doc:
If you go the route of using the Org field for full name, then you do not need to do this because the directory will already sort by the org field.
