Sorry, no, there is no shortcode option to change the default select text. However, you should be able to use the Say What? plugin.

Follow the instructions in this tutorial. Except you would use the cn_multi_category_search text domain instead.

Since the admin access was still available I changed “Select a State” to “Select a Region” which you can use as example to chance them as you wish.
