Sorry, other than the “core” required fields first/last name if an individual or org name if a business it is not possible to set user defined required fields. That said, I have been adding fieldset configuration options to Connections. They are found on the Connections : Settings admin page under the Fieldset Configuration tab. I have added this as a feature request to the issue tracker.
