Sorry, there is not a way to group entries by category automatically. If your directory has a small number of entries, you could use the Connections shortcode on the page once for each category using the category shortcode option to create the groups.

If you have the settings to allow the user to click thru to the single entry, with this setup, you find that you’ll have a bunch of duplicate entries listed instead of just the one. The entry will be listed for each category group you created. This can be worked around by creating a second page which contains only the [connections] once with no options. Then adding the home_id shortcode option to each category group shortcode on the original page.

If you directory is larger, let say more than a 100, this will not work well and I would recommend against it (unless you create a separate page for each category group).
