Yes, there is a renewal discount of 20% off the current full price at the time of renewal.

You can create custom fields right now, regardless of the template. There is no user interface to do so. Here’s a tutorial on how to add a text custom field.
RE: We are also looking at using Paid Membership Pro and then allowing our members to upload and edit their own profiles, I’m guessing that I need ‘forms’ and ‘links’ extensions for this, will I need anything else?
You need at least the Link extension, Form is optional but nice if you wish the user’s only be able to make changes on the site’s frontend vs. their admin Link user profile page (like the WP user profile page, but Connections specific).
