On the WP Dashboard or the Connections Dashboard? There is already a Birthday widget on the Connections dashboard.

Possible, but it would require some custom developed code.

RE: There are certain things they won’t need, like “Anniversary.”

In the upper right of the screen, click the Screen Options tab. You can turn off the Anniversary dashboard widget.

Yes, it is possible. Just a small little filter can be added to remove that type… other types can be add too using the same method. If you decide to move forward, I can give you instructions on how to add the filter as a code snippet. Here’s an example tutorial on how to do the same thing, but with addresses.
