The list renders alphabetical by last name (if entry is an individual) or organization name (if the entry is an organization) by default. This only changes if you’ve used the order_by shortcode option to change the default.

Yes, I would assume it would not because category is not a valid option. The list_type shortcode option support only individual, organization and family as options which relate to the three different entry types which can be added.

Any of the premium templates have a method to filter the list by category. I’m guessing the Enhanced Categories extension has the solution you are looking for.
