It does not work that way … the categories you add will not be in the POT file, only the static strings within the plugin will be.

If you want English, you also have to add them in English in Connections. Create two root parent categories, one for German and one for English add categories as needed as children to those two roots. When you add entries, assign the categories as they are relevant. You will likely want two directory page then, one limited to the display of the categories in the German category tree and one for the English category branch.
