Honestly, I still do not entirely understand… I thin you want to change the strings coming from $corePhoneTypes = $instance->options->getDefaultPhoneNumberValues();. If that is the case, you can either hook into the filters and change the values or edit them directly. The function is found in the class.options.php file in this folder:
../includes/settings/class.options.php
