The phone number labels should already be in German if WordPress is running in German. Now if you’re trying to change the German labels to something else, then you, counter intuitively, need to enter the English origin string and not the German translated string. I guess that is how WP handles it. I just tested it and it does work. For example to change Home Phone, in German, Telefon Privat to just Telefon you need to enter Home Phone in English as the Original string. Then enter the connections as the domain and finally Telefon your Replacement string.
