Yes it is possible to change the name format. By default it is this:
[connections name_format='%prefix% %first% %middle% %last% %suffix%']

To change it to last name first, do this:
[connections name_format='%last%, %first%']

There is not a way to “hide” the email address. If spam bots are your concern, please checkout the ROT13 Email Encryption Extension.
