There’s no way to change or edit this category and it is required for Connections to function… however, with that said … If the Uncategorized category is completely empty, meaning absolutely no entries assigned to it, private or unlisted you can use a cMap shortcode option to hide empty categories. Since Uncategorized will be empty it will not be shown in the list.
